Tis the time of year when so many of us make a resolution to lose that muffin top, the tummy chub and the thunder thighs. So here is a delicious bran muffin recipe that is healthy and quick. A great breakfast that you can grab and go. If you want to make it even healthier, swap out the oil for apple sauce!
Ingredients:
1 box of Raisin Bran (15-20 oz)
5 c. Flour
3 c. Sugar
2 tsp. Salt
1 c. Oil
1 quart Buttermilk
4 Beaten Eggs
5 tsp. Soda
Method:
Mix all the ingredients together in a large bowl, then bake in muffin tins at 375 degrees for 15-20 minutes.
This recipe makes 44 muffins, so you can either bake them all and freeze the muffins, or the batter will keep in the refrigerator for us up 6 weeks.
